Khao soi: the dish you came for

A coconut curry noodle soup topped with crunchy fried noodles, with pickled mustard greens, shallots and lime on the side. It's the signature dish of the north and Chiang Mai does the best in the world. Here are the spots that matter:

Most street stalls and old-school spots are cash only. The cult places keep short hours and close when they sell out, so eat khao soi at lunch, not dinner. And 'closed on the day you wanted it' is a Chiang Mai rite of passage — always have a backup.
